I am using “media and text” blocks which appear fine on desktop but on mobile the images appear above the text and are way too big. Is there a way I can change this or remove images altogether for the mobile site? I’ve tried looking for a plugin to override the mobile site but none of them seem to fix this issue.

The blocks appearance and layout is controlled by WordPress’ built-in blocks styling.
I notice on the about page that Liz’s block is properly displayed on mobile (being set to vertically align) while all the others have their images enlarged full width (because they’re set to vertically stack on mobile).
You might want to look into adjusting the appearance options.
