How can I remove the ‘Menu’ title/option and replace with ‘Categories’ on the main side bar of my site? Thanks.

I am not sure I understand your question without being able to browse your site.

The menu is configurable from WordPress’ menu management scrmeen (under Appearance > Menus) or in the Customize interface.
