Is there any chance that there could be an option to change the maximum width of all of the content, not just the sidebar? We have quite a few still using older monitors & such, meaning they have to scroll horizontally to see our whole site.

There has always been such an option. The same slider that controls the sidebar width controls the content and the total site width.
