I use a presentation page on my site and have created a “Blog” page which displays just 1 post – this is what I want, just the latest post displayed.  My Category pages also display just one post excerpt, but I would like these pages to have multiple post excerpts.  If I change the “Settings – Reading – Blog pages show at most” to more than 1 then I also get more than 1 post on my “Blog” page.

Is it possible to have a “Blog” page with one full post displayed and category pages with multiple excerpts displayed?
